8-10 medium potatoes
1 cup sour cream
8 ounces cream cheese (softened)
4 Tablespoons butter
1/3 cup chopped chives
salt and pepper
paprika
Boil peeled potatoes until tender. Beat sour cream and cream cheese together with a mixer, add hot potatoes and beat until smooth. Add butter, chives, salt and pepper to taste.
Pour into a well-buttered casserole dish. Dot with butter and sprinkle paprika on top.
Bake at 350 degrees for 25-30 minutes.
You can make this a day ahead and you can adjust your cooking time accordingly. I love making things ahead of time. It makes Thanksgiving that much more relaxing. Even if you make it the morning of Thanksgiving, it gives you that much more time to spend with your family and friends!
This is an easy recipe to double if you are having a lot of people over!
